I don't know a thing about the cor...Hey Kevin,<br /><br />I don't know a thing about the correct terminology for a group of ducks. I do know that their meat is very good. One often hears of duck confit- duck meat fried in its own fat- because their meat is extremely fatty and rich. Their eggs are large and very hight in protein, but they taste sort of 'gamey' to me. I used them in a chocolate pot de creme and would never do that again. <br /><br />About your helpful suggestion, YES, I did wait to let them fatten up and it definitely made them sweeter. I was thinking they would be more tough when they were bigger but instead they were just better. We have been growing a variety of beet called 'bulls blood' and they too don't seem to sweeten up until they have really had a long time in the ground. We are pulling up 2 1/2 pound beets now. They look ridiculously huge, but they are finally very flavorful and they haven't become woody either. Your egg picture shows how 'urban' I am - the really dark yolks from your chickens look weird to me. <br /><br />On top of eating slugs, what else would you do with the ducks? Do you eat their eggs? Harvest them for meat? Both? Also, are a group of ducks called a flock? I thought they had some other fancy name, like a string, or something like that. <br /><br />One final question, since I haven't posted since writing about the sweet peas - did you have luck letting them grow a bit more before harvesting?<br /><br />I love checking in on your blog every week or so to see what's new. I know our local farmers' mar...I totally agree. I know our local farmers' market is trying to amp up their egg capabilities, expecting a rush of consumers who are too scared to buy supermarket eggs. I love having chickens. We are actually contemplating having a flock of ducks because we hear they are particularly good at consuming slugs and we have far too many of those in our garden to grow things without issue.
